When you know where you beef comes from, and you are supporting local farmers and processors. Shopping locally keeps most of the money in your community’s local economy. Plus, you know where your beef comes from, locally in you community.
Averaged meat cost is much cheaper than grocery stores and bulk buying is cheaper in todays rising grocery store pricing.
HOW MUCH FREEZER SPACE IS NEEDED
FOR A FULL OR HALF ORDER?
For a half order approximately 17 cubic foot of freezer space is needed for a 375 lb. half beef.
The way the meat is cut and the way it is stacked in the freezer will affect the space needed.
Average hanging weight is approx. 300-375 lbs. (hanging weight is the weight of the carcass after initial slaughter once the hide, organs, head and feet have been removed. This weight still includes the trim, which is the fat and bones). This is the weight used to calculate the price/lb for the meat and the butchering fees. This is typical for farm direct ordering

HOW DO I GET THE BEEF?
After all the beef is processed and the meat frozen, it will be picked up and brought back to the Sommer Estate Farm. You do not have to drive to the butcher. A pickup date will be given when you place the order. You will need to bring boxes or coolers to transport your order home. We can also deliver directly to you home for an extra fee.
HOW MUCH MEAT DO I GET?
It’s a healthier option. All the meat is from one locally raised animal, raised on Sommer Estate Farms in Surrey, BC Renata and Rick are available to describe their farming practices so that you can make good decisions for your family.

HOW DO I PAY?
We require a deposit to pre-order. Deposit can be made by e-transfer or cash. Balance is not due until order pick up/delivery. Deposits are refundable up to 30 days prior to your estimated “dispatch" date. Pick up is usually within 14-21 days after dispatch.
HOW TO ORDER
Deciding to purchase a 1/4 or 1/2 or a whole beef for your family is an economical way to fill your freezer and support a local farmer, but the pricing can be very confusing for a first time consumer.
Here are some details to help you understand exactly how you are being charged, and what exactly you are paying for.
FULL ORDER

Not all of the steer makes it to the table. On average, a 1,250-pound steer will only weigh approximately 58% of its live weight once it makes it to the rail.
This approximate 42% loss during the slaughter and dressing procedure is a result of the animal being bled and the hide, head, hooves, viscera, lungs, and heart being removed. The remaining 58% is often referred to as the “Hanging Weight” or the weight “On the Rail”.
But, the loss doesn’t stop there. Once the carcass is on the rail it begins to leach moisture (shrink) which accounts for additional weight loss.
Consequently, the longer the beef hangs, the more weight and moisture loss. This along with the fat and bone removed during the cutting account for an additional 30%-45% loss depending on bone-in vs. boneless cuts and if one chooses to take all their offal (liver, heart, tongue, tail, & suet).
In summary, a steer weighing 1,250 pounds on the hoof will average around 430 pounds of retail cuts (steaks, roasts, ground beef, stew beef, etc.).
